Objective: The tour to Saras Dairy facility in Jaipur and gain a comprehensive understanding of their dairy production and processing operations, with a focus on learning about their sustainable practices and quality control measures.

 

Summary/Description: The IISU Chemical Association under the aegis of Department of Chemistry, IIS (deemed to be) university organized a learning expedition to Saras factory Jaipur on 8th November, 2023 for students of M.Sc. and B.Sc. (H) under the guidance of Dr. Priyanka Jain and Dr. Trapti Gupta .

 

On reaching there we were first greeted by our guide, who gave us the detailed insights about the history and working of Saras dairy. He first took us to the paneer processing unit where he explained us how paneer is made from milk by use of citric acid for its curdling. Further he explained us about the history of Saras industry.

We then went to milk processing unit where taught us about the production and packaging process. Milk is first collected from the nearby villages of Rajasthan. On reaching the factory it undergoes through a rigorous quality check in the quality control lab. After which it is segregated in five categories according to the fat content present. It is then sent to the pasteurization unit for pasteurization and then is cooled down and sent for packaging.

We then proceeded to curd production unit where he explained us the method and steps of curd production in the factory. Curd is made from toned milk which is heated up to 55 0 C, then culture of lactobacillus bacteria is added to it the milk. It is then kept for 2 to 4 hours in a hot room to allow the bacteria to grow rapidly after which it is kept in cold environment to keep it fresh and it is sent for packaging. He then showed us the recently established ice cream processing unit in the factory. The guide really gave us the clear and concise knowledge of the entire factory.

Outcome: This factory visit was a truly knowledge imparting excursion for us where we gained some practical knowledge about the working of the biggest dairy of Rajasthan. The visit provided a behind-the-scenes look at the operations of a leading dairy cooperative in India, highlighting their commitment to quality, sustainability, and community engagement. By the end of the visit, we all had a deeper appreciation for the complexities and best practices in the dairy industry.
